Marq ‘Wild Ferment’ 2018 Chardonay

Marq 2018 ChardonnayA self-confessed chemistry nerd, Mark is producing some ‘classics in the making’ using alternative grape varieties and methods including wild yeast fermentation and partial grape drying.

From the wine list:

Small project by local Winemaker Mark Warren & Family Winery… An ongoing favourite wine.

Naturally occuring vineyard yeast, whole-bunch pressed to 33% new French oak and wild ferment are utilised to produce a wine with attractive aromas of white peach, grapefruit, gun-smoke and flint. Tight, fine with intense white peach, lemon curd, cashew flavours and complex chalky mouthfeel, savoury aromas.  Delicious texture and funk!
